Pork Chops Primavera

Ingredients
4 slices peppered bacon cut into I” pieces
16 oz. trimmed fresh young green beans
1 cup water
4 pork chops, cut 1/2'” thick
3 Tbsp soy sauce
1/3 cup apple butter
¼ cup water
2 cups red and/or yellow cherry or grape tomatoes, halved if desired
1 Tbsp corn starch mixed with 1 Tbsp water if needed

Directions

      In a medium sauce pan add 1 cup water and the green beans. Cover and boil for 8 minutes. Drain and set aside.
      At the same time, in an extra-large skillet, cook bacon over medium high heat until crisp. Drain on paper towel.
     Trim the unwanted fat from the pork chops, brush them with soy sauce, and brown them on both sides in the bacon drippings.
      Reduce the heat to medium. Add the apple butter and ¼ cup of water to the pan, cover and simmer for 5 minutes.
      Add the tomatoes and green beans. Simmer, uncovered 5 minutes while the sauce thickens. If it does not thicken due to the tomatoes’ juice, mix 1 Tbsp corn starch with 1 Tbsp water, add to pan, stir in until blended.

1.   Serve with a side of salad, potatoes, or just bread.
